店主の名前がスヨリト。

私たちはモンゴル民族のラム肉料理店。

モンゴルの草原で暮らしを営む遊牧民族が受け継いできた食文化を伝えたい。そのような気持ちで2022年12月に開店し、営業を続けています。

店主の名前が「スヨリト」です。中華人民共和国の内モンゴル自治区出身のモンゴル民族です。

羊と暮らす、草原の民。

標高1000m前後のモンゴル高原は大半が果てしなく広がる草原。この草原で、スヨリトたちモンゴル民族は、1500年以上も放牧生活を営んできました。

主な家畜は羊です。衣食住すべてのシーンで羊の恩恵に支えられ、暮らしを営んできたモンゴルの人々は、羊を美味しく食べる知恵も受け継いできました。

長い肉歴、技術、知恵。

魚歴が長い日本人の魚を美味しく食べる知恵と同様に、肉歴の長いモンゴルの人々は、肉を美味しく食べる知恵に長じています。

「草原の料理 スヨリト」では、羊歴の長いモンゴルの人々が育んだ、美味しく羊を味わう知恵をお楽しみいただきたい。そう願っています。
